NO bake Cheesecake…..

cheesecake1For the Hubs Birthday he asked for homemade cheesecake and lasagna. Being in the camper I never really had the room to make an appropriate lasagna and the cheesecake, we never had refrigerator room to keep it. So I put on my headphones and set to work enjoying all the room of my new kitchen. It has full size everything and is absolutely wonderful. I’ve become lost a few times. LOL If you are like my husband than cheesecake is life. He prefers creamy and fluffy to hard and firm cheesecake any day of the week. This recipe I use has to be made an hour to a few hours before it is expected to be served, but the prep work takes all of 10 minutes.

First, make the individual decision to either make your own graham cracker crust or buy a pre made one. The crust is you decide to make it is simple.

  1. Melted butter (1/3 cup)
  2. (1-2 cups) of crushed graham crackers.

Mix together using a fork, cup or flat surface in order to flatten the mixture into a pan.  This time I decided to just buy a crust, it was more cost-effective because I didn’t have any graham crackers on hand.

Secondly, the filling for the cheese cake includes:

  • 8 oz of cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup of heavy whipping cream

That’s it. Simple but delicious. You will need a mixer to make it smooth and my suggestion is to use the mixer to break up and whip the cream cheese for a few minutes before adding the other ingredients. Add the cream last and mix all together until you see the cream froth a little. It will look smooth and creamy. Using a spatula, serve into the crust, cover and refrigerate before serving.

cheesecake4As the topping my husband choose a strawberry pie filling out of the can. He gets a little and places it on each individual piece before eating it. My boys though like chocolate syrup spread over the top. It’s really up to your wants and preferences when it comes to the topping. The filling I make is very versatile in that it goes with just about anything.

I hope you take the time this weekend to make this. It is always a winner in my house and the fact that it is simple and doesn’t take too long to make is a bonus.
