So since morning sickness has set in, our eating habits at least mine, have gone straight out the window. I can’t stomach much and what I can eat and hold down is usually nothing to be proud about. Vegetables have been a big no-no, so clean eating has taken a back seat to just getting caloric intake. However, I received a reprieve the other night and felt good enough to try a healthy low carb meal that I found before getting pregnant.
Pizza Smothered Chicken Breasts
Honestly, the picture of the finished project did it for me, cause it looks like amazing greasy cheesy pizza but surprise its healthy. So I thawed out a pound of chicken breast. (just one breast)I know what you are thinking, “that’s not enough” or “That’s it?” Portions are one of the major reasons people overeat. We actually don’t require a lot of food at one setting. And chicken in one sitting should be limited to 3-4 ounces. A pound of chicken or one large breast is 16 ounces. That’s 4 times the recommended amount. Kinda sounds crazy doesn’t it? I thought so too before I rewired my brain. It took time and a lot of forethought but once I had created a habit, it stuck like glue.
For this recipe one pound of chicken worked awesome, though my husband wanted more than that for leftovers, and there would have been plenty but I did not anticipate the popularity of the dish to my three-year old, who ate more than my hubs and I combined. Two-serving to be exact and asked for more, so its safe to say that it was a hit. The hubs took a different approach to the chicken than I did. He made a sandwich out of it and ate it so fast that I had to ask him if he tasted it….. at all. To which he replied “yes I tasted it…” in the most sarcastic voice you can imagine. LOL. I will have to make it a part of the regular rotation. Below is the recipe I used and the way I made it.
- Chicken Breast-1 pound
- Spaghetti or Marinara sauce (your preference), 1 Cup
- Garlic Powder
- mozzarella cheese
- Turkey pepperoni
- Butterfly chicken breast then cut into 4 pieces. Pound chicken until flat but not shredding. Sprinkle with Garlic powder and oregano.
- Preheat oven to 400 Degrees.
- Simmer sauce in a sauce pan until lightly boiling and hot.
- Brown chicken in a skillet and place into a glass baking dish.
- Cover chicken with generous amount of sauce. Place pepperoni over each piece and sprinkle with generous amount of cheese.
- Bake chicken uncovered for 25-30 min or until cheese is melted or browned.
Enjoy by itself, with veggies, as a sandwich or anyway you see fit.
This recipe was a great base but I think next time I’m going to make it a bit more diverse. Probably add mushrooms, sausage and a few more veggies (Onions, green peppers, black olives.) Now that we know how good it turned out, we can actually make a variety of different pizza combinations to match any taste.
